New feature: A week’s dinner menu

As I’ve shared before, I typically plan the week’s meals and go grocery shopping on the weekend. It’s one more thing I do to make sure I can make time for running.What La Chica's familia is eating this

Since I’m putting in all of that work, I figured I’d share the menu to give y’all some ideas. I’ll link to recipes when it’s something I’ve found online (thank God for Pinterest!) or post photos when the recipe is from one of my recipe books or magazines.

This is where I tell you that I’m not a dietician. This is just what we eat and is meant as a way to share ideas to make meal planning easier. Most weeks, I plan our dinners for Monday through Friday; we eat leftovers or this, that and the other on the weekends.

You know I love meal planning for many reasons. One of the things I do, especially since I run a lot and there’s only 2 of us, is cook a lot on Sunday evenings. I use my crock pot every Sunday to do chicken, roast, and tonight it’s baby back ribs. I also bake casseroles or lasagna, baked spaghetti, etc. This works for because I don’t mind eating the same meal several times a week, I get my variety on the weekends.


I do a lot of baking on the weekends, too, but what I make doesn’t last very long! That’s what happens when there are seven people in your household.

When we do have some leftovers, we tend to eat them for lunch.
