How’s your weekend going? I got to run with el husbando and my friends, so things have been great. I’m following Hal Higdon’s half-marathon training plan as I prep for the Gazelle Girl Half Marathon in April in Grand Rapids, so I’m running four times a week right now. Following the plan also gets me to do the other things I’m supposed to be doing like cross training, eating better and getting enough sleep.
Speaking of following a plan, I heard from some of you that you found my week’s menu helpful, so below are the meals my familia is having this week. And here’s how I make my meal plan in the first place.
Did you try any of the recipes from last week’s post? The Hawaiian crockpot chicken was new to us and it was a huge hit here. It was sweet and the pineapple itself was soft and delicious. White rice complemented it nicely, but you could pair it with another starch.

This week, we’re having:
Bowtie pasta, meal sauce, rolls, green salad
Nachos with ground beef, shredded cheese, lettuce, tomatoes and salsa
Lasagna, green salad, rolls
Baked chicken tenders, baked fries, corn
Chicken parmesan, spaghetti, green salad, rolls
And if you want a super-easy and yummy dessert recipe, try this crockpot apple crisp. I made it twice; the second time without lemon juice because we ran out, and I thought it was better. Also, I used both Macintosh and Honey Crisp apples.
